(yeah it's my made up word) Anyways, the only thing I would change about the recipe overall would be to add fresh strawberries to the jam mix when adding it to the pie crust, just to get some extra texture, but I still really like this pie. It's so simple and isn't that what you want in the summer. Strawberry Jam 3lbs strawberries (fresh or frozen) 2 cups honey Cook down strawberries and honey to super thick and jammy consistence. Let cool. FYI if using fresh you may want to add a smidget of water/lemon juice just to make everything come together. | As promised...something totally fabulous! See those strawberries over there is that big pot? Well, I made a beautiful strawberry jam out of them. So wonderfully strawberry and deep red and just the tastiest thing you could ever put to your lips. To confess, I am strawberry's #1 fan, so this just put me over the moon, but if strawberries aren't your thing then you could probably use some other fantastic SEASONAL fruit. So I put some strawberries and honey into the pot, put it on low, stirred occasionally and let it cook down. You may need to adjust the amount of honey to the sweetness of the fruit used. The longer it cooks, the more attention it needs, and the thicker it will be when it cools. After cooling, you could pour it into pretty mason jars and call it jam. I'm sure family and friends or strangers would be happy to have some because it is wonderful but I made it into a pie; just like that down there. |
I will admit that this particular pie crust is not paleo but a frozen store bought one. I do, however, have a paleo pie crust recipe that I will be using next time I do something pie-ish. A little creme of coconut or whole coconut milk foamed and put on top will give you just what you need, It changes the expectation of this pie. Please make it and enjoy the strawberry loveliness.
