I know that awhile back I promised Korean Beef, it was eaten before I could take pictures... so we'll have to revisit that. In the meantime, to get my crazy self back on track, I decided to post my superhero husband's favorite, peanut butter cup brownies. Doesn't that just sound wonderful? It's our anniversary, so he'll definitely be getting a pan of these, just as soon as he comes home again.
Peanut butter and chocolate... what could be better? I feel terrible for someone that doesn't like either or <gasp> both. You just don't know what you're missing. BUT if you love this combo, then this is definitely the recipe for you. Unfortunately, these brownies don't last long, but are fabulous with ice cream and of course, are best when eaten warm. They are so simple too. You probably have all the ingredients in your house and if not, well, I'm sorry.

Here's your recipe to the fabulousness of my husband's favorite.... you're welcome!
PB Cup Brownies (this is not paleo... yet)
2 c. sugar 1 c. butter
2 tsp. vanilla 3 eggs
3/4 c. cocoa 1 c. flour
1/2 tsp. baking powder
1/2 tsp salt dash cinnamon (optional)
1 c peanut butter chips or pb cups chopped
Mix ingredients and bake in greased pan at 350 degrees for 30-ish minutes (depending on how you like your brownies.)
**I've found that leaving out the baking powder makes for a fudge-y-er brownie but it's totally up to you, this will however lengthen your baking time just a little bit. Also, if you don't happen to have pb or pb cups just hanging around, you could do a couple of heaping tablespoons of regular old peanut butter on top and swirl it around. Whatever makes it yummy to you. A peanut butter frosting on top of these would also be good, oh the possibilities.
